PORK LOIN RECIPE WITH BLACKBERRY SAUCE
Ingredients: (For the pork)
– A pork loin @Plumrosevzla of approximately 2 kilos
– 1/4 cup oil
– 1/2 cup of white wine
– 1/4 cup of white vinegar
– 6 or 7 large garlic cloves
– 2 teaspoons of “Creole adobo”
– Freshly ground black pepper
– Dried oregano, whole.
(Ingredients for the sauce)
– 1/2 kg of frozen blackberries. (We can use peach, mango, passion fruit, pears or apples and we will only vary the wine to use, to avoid darkening the color of the fruit)
– 5 tablespoons of sugar (more if you like it sweet, less if you prefer it more neutral)
– 1/2 cup of Samson wine, port or Marsala
– 4 tablespoons of Butter + 2 of oil.
– 1 tablespoon of cornstarch dissolved in 1/2 cup of meat stock
– 1 large, crunchy onion, diced.
– A Mix of equal parts magic powders. Cloves, cinnamon and nutmeg.
– Freshly ground black pepper
– Salt to taste
How to prepare this delicious dish? Check below:
In a blender mix wine, oil, vinegar, marinade, garlic, freshly ground pepper.
Blend it until it is homogeneous and the whole oregano is added.
The pork loin is washed and dried with absorbent paper.
In a glass container, the loin is bathed on all sides and lined with plastic wrap. It is put to marinate in the refrigerator for a day, taking the precaution of turning it over and macerating it in it marinade on all possible sides.
Remove it from the fridge one hour before baking so that it reaches room temperature (This shortens the time in the oven and saves gas or electricity)
Bake it for an hour and a half, lined with aluminum foil.
It is “undressed” and baked in “Broil” mode for 15 more minutes, to brown it.
Let it cool and slice it cold, this guarantees a solid and whole slice. Then it is wrapped with plastic wrap so that it does not dry out.
Take a thick-walled pot to the stove and add the oil and butter. Sauté the onion until transparent. Add the blackberries and sugar and lower the flame, while paddling until they cook in their own juice. Clove, cinnamon and nutmeg are added. Then the meat bottom in which the cornstarch has been dissolved.
It is paddled until it thickens and the Sansón wine, port or Marsala is added.
Season it with salt and pepper and given a blast of the stove, until it has the desired thickness.
A spicy touch can be added with a tablespoon of spicy BBQ
Finally, it is ready to be served piping hot.
